Hey Shawn! I find sunset pictures really challenging to get exactly how I want them, but I find it really useful to use the flash with background setting. It makes the subject clearer (so Jess, which is what you want to see, I'm assuming) and it keeps the background nice and vibrant. I don't know exactly what is different on the settings for that (or why it's different than just using P with flash) But it makes a difference- big time!
Also, if you want to make the green stand out, change the colour to Landscape.
That's actually the colour look I was going for. and if you want your photos to really pop, then shoot in raw with the white balance in auto and then change it to daylight (or whatever the lighting is) in adobe lightroom.
